How Jen Gets Her Recipes When Cooking With Claudia

Recipes

You’ve made it to our recipe page!  Congratulations – we are going to show you some fun and easy Italian recipes.

Please excuse our recipe measurements in advance… most of what Jen has learned is old-school Italian, which means you use “this much” or “a palmful of risotto” as opposed to “one tablespoon” or “a cup of rice”.   My favorite story was when she learned how to make pizzoccheri (a type of pasta) and asked which three cheeses to use.  The answer – “Why, an old cheese, a young cheese and a mountain cheese of course!”  We’ll try to be a bit more specific, when possible.

Enjoy!
